IAG’s NuBana Green Banana Flours

An appealing upcycled, gluten-free ingredient

CHALLENGE

Green banana flour is a versatile upcycled ingredient derived from unripe, peeled bananas. International Agriculture Group (IAG) recognized it as a promising grain- and gluten-free option. Problem was, many product developers were not familiar with this ingredient—let alone its uses and benefits. IAG turned to CuliNEX to develop formulations and collaborate on messaging to drive awareness and spark new opportunities for this environmentally friendly ingredient.

SOLUTION

To prove the value and versatility of this new ingredient, our Culinologists turned to some old favorites. The brownies, doughnuts, muffins, and mug cakes they formulated with green banana flour proved to be just as delicious as those made with traditional ingredients. But these treats were 100% gluten free, relatively low in sugar, and created with upcycled ingredients. Work and content provided from CuliNEX allowed IAG to develop sales materials to accompany new and exciting application support.

The formulations and content created by CuliNEX had powerful appeal and proved to food producers that this gluten free, low sugar ingredient has a range of real-world uses. This work was instrumental in helping IAG launch NuBana Green Banana Flours. In addition, not long after they added NuBana Green Banana Flours to their product line, IAG was purchased by Griffith Labs. This partnership resulted in even more growth opportunities by combining IAG’s banana expertise with the global capabilities and extensive resources of Griffith Labs.
