The Tenets of CuliNEX Development: Organics and Culinology
The CuliNEX product development methodology is based on two complementary concepts. One is to formulate products under USDA National Organic Program standards, which is a well defined legal framework.
The other concept is to formulate products through a discipline called Culinology. Culinology brings together food science and culinary arts: two skill sets that are required for quality product development but are rarely integrated.
“The genius of this discipline,” said Crowell, “is that the art and science of food development are integrated together.” Combining the experimental design with the art of culinary arts yields delicious results in the difficult task of formulating Clean Label products.
